- 1 cup rolled oats
- 1 cup milk (dairy or plant-based)
- 1/2 cup Greek yogurt (plain or vanilla)
- 1/4 cup cream cheese (softened)
- 2 tbsp honey or maple syrup
- 2 tbsp freshly squeezed lemon juice
- Zest of 1 lemon
Instructions
- In a mixing bowl, combine rolled oats, milk, Greek yogurt, honey or maple syrup, lemon juice, and lemon zest. Stir until well mixed.
- Add softened cream cheese and whisk until smooth; don’t worry if it’s slightly lumpy.
- Transfer the mixture into jars or containers with lids, layering with fruits or nuts if desired.
- Seal and refrigerate overnight (or at least four hours) to allow flavors to meld.
- In the morning, stir well and enjoy directly from the jar or in a bowl topped with fresh berries or additional lemon zest.
