- 1 round loaf of Italian bread
- 6 oz salami, thinly sliced
- 6 oz capicola, thinly sliced
- 6 oz mortadella, thinly sliced
- 6 oz provolone cheese, shredded
- 1 cup mixed green and black olives, chopped
- 2 cloves garlic, minced
- 1/4 cup celery, diced
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
Instructions
- Slice the round loaf of Italian bread in half horizontally.
- In a bowl, mix together olives, garlic, celery, parsley, olive oil, and vinegar to create the olive salad.
- Layer salami on the bottom half of the bread, followed by capicola and mortadella.
- Add a generous layer of shredded provolone cheese over the meats.
- Spoon the olive salad mixture on top of the cheese.
- Place the top half of the bread back on and gently press down. Wrap tightly in plastic wrap or foil and refrigerate for at least one hour before serving.
