- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 fresh jalapeños, finely chopped
- 1/2 cup raspberry jam (natural)
- 3 cloves garlic, minced
- 1/4 cup low-sodium soy sauce
- 1/4 cup honey
- 2 tbsp freshly squeezed lime juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper on both sides.
- In a bowl, mix raspberry jam, garlic, jalapeños, soy sauce, honey, and lime juice until well combined.
- Place the chicken in the prepared baking dish and pour the sauce over it.
- Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Serve drizzled with remaining sauce and garnish as desired.
