- 2 cups fresh okra, sliced
- 1 pound beef or goat meat, chopped
- 2 tablespoons ground crayfish
- 4 cups seasoned beef or chicken broth
- 1/4 cup red palm oil
- 1 medium onion, chopped
- 1 scotch bonnet pepper, chopped (adjust to taste)
Instructions
- Rinse and slice the okra; chop the meat into bite-sized pieces.
- In a large pot over medium heat, combine the meat and onions with enough broth to cover. Simmer for about an hour until tender.
- Once cooked, stir in ground crayfish and scotch bonnet pepper.
- Add red palm oil and simmer for an additional ten minutes.
- Gently mix in the sliced okra and cook for another five minutes until thickened but still intact.
- Serve hot over rice or with warm bread.
