- 1 lb lean ground beef
- 2 medium zucchinis, diced
- 2 medium sweet potatoes, peeled and cubed (about 2 cups)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp extra-virgin olive oil
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Prepare your ingredients by washing and peeling sweet potatoes; chop into cubes. Dice onion and zucchini.
- In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent (about 3 minutes).
- Add ground beef to the skillet. Cook until browned while breaking it apart with a spatula (around 5 minutes).
- Stir in sweet potatoes along with paprika and cumin; cook for about 10 minutes until they start to soften.
- Add zucchini to the skillet and mix well. Cook for another 5 minutes until zucchini is slightly softened but still crunchy.
- Taste and adjust seasoning if necessary before serving.
