- 8 oz farfalle pasta
- 1 cup cooked beets, cubed
- 1 cup heavy cream
- 2 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot, add farfalle pasta, and cook until al dente (about 10-12 minutes). Drain and set aside, reserving some cooking water.
- In a saucepan over medium heat, warm olive oil and sauté minced garlic until fragrant.
- Blend cooked beets with heavy cream until smooth.
- Pour beet mixture into the saucepan with garlic over low heat; simmer for about 5 minutes.
- Add reserved pasta water if needed for desired consistency.
- Toss in drained farfalle and grated Parmesan cheese until well coated.
- Serve garnished with fresh basil leaves.
