- 1 cup Arborio rice
- 2 medium fresh beets (about 200g)
- 4 cups low-sodium vegetable broth
- ½ cup dry white wine
- ½ cup freshly grated Parmesan cheese
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp butter or olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Wrap beets in foil and roast on a baking sheet for about 1 hour until tender. Once cool, peel and cube.
- In a large skillet over medium heat, melt butter or heat olive oil. Sauté chopped onion and minced garlic until translucent (about 5 minutes).
- Stir in Arborio rice and toast for 2 minutes, stirring constantly.
- Add white wine and stir until absorbed.
- Gradually add warm vegetable broth one ladle at a time, allowing each to absorb before adding more (about 20 minutes total).
- Once creamy and al dente, fold in roasted beet cubes and Parmesan cheese. Season with salt and pepper to taste.
