- 2 ripe mangoes, peeled and diced
- 8 oz fresh burrata cheese
- 1 cup fresh basil leaves, torn
- 1/3 cup sliced almonds, toasted
- 2 tbsp extra virgin olive oil
- 1 tbsp aged balsamic vinegar
Instructions
- Wash the mango and basil leaves. Peel and dice the mangoes into bite-sized cubes.
- Toast the sliced almonds in a dry skillet over medium heat for about 3-5 minutes until golden brown.
- In a large serving bowl, gently combine the mango cubes and torn basil leaves.
- Tear the burrata cheese into pieces and place it on top of the mango-basil mixture.
- Drizzle with olive oil and balsamic vinegar for even coverage.
- Top with toasted almonds and serve immediately.
