  • 1 red bell pepper, thickly sliced
  • 1 yellow bell pepper, thickly sliced
  • 1 medium zucchini, sliced
  • 1/2 cup freshly squeezed orange juice
  • 2 tbsp grated fresh ginger
  • 2 tbsp low-sodium soy sauce
  • 3 tbsp extra virgin olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix grated ginger, soy sauce, and orange juice. Cut chicken into cubes and marinate in the mixture for at least 30 minutes.
  2. Chop kale into bite-sized pieces and slice bell peppers and zucchini.
  3. Skewer marinated chicken and veggies alternately on skewers.
  4. Preheat grill to medium-high heat; cook skewers for 10-12 minutes until chicken reaches an internal temperature of 165°F.
  5. Whisk together olive oil, honey, remaining orange juice, salt, and pepper for the dressing.
