- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream
- ¾ cup granulated sugar
- ¼ cup fresh lemon juice
- ¼ cup fresh lime juice
- 1 cup fresh cherries, pitted and halved
- ½ cup pistachios, chopped
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Mix in sour cream, lemon juice, and lime juice until creamy.
- Gently fold in cherries and pistachios. Pour filling over crust and smooth the top.
- Bake for 50-60 minutes until set but slightly jiggly in the center. Turn off the oven; leave cheesecake inside for an hour to cool gradually.
- Chill in the refrigerator for at least four hours before serving.
