  • 1 cup sour cream
  • ¾ cup granulated sugar
  • ¼ cup fresh lemon juice
  • ¼ cup fresh lime juice
  • 1 cup fresh cherries, pitted and halved
  • ½ cup pistachios, chopped

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Mix in sour cream, lemon juice, and lime juice until creamy.
  3. Gently fold in cherries and pistachios. Pour filling over crust and smooth the top.
  4. Bake for 50-60 minutes until set but slightly jiggly in the center. Turn off the oven; leave cheesecake inside for an hour to cool gradually.
  5. Chill in the refrigerator for at least four hours before serving.
