Instructions
- In a large skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until translucent (about 3-4 minutes).
- Stir in the Arborio rice and toast for about 2 minutes.
- Pour in the red wine and simmer until mostly absorbed.
- Gradually add vegetable broth, one ladle at a time, stirring frequently until the rice is al dente (about 18-20 minutes).
- Mix in crumbled goat cheese and Parmesan (if using) until creamy.
- Serve topped with candied walnuts for added crunch.
