- 8 oz fettuccine or penne pasta
- 2 medium beetroots (about 1 cup when roasted)
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wrap the beetroots in foil and roast for about an hour until tender. Allow to cool, then peel.
- Cook the pasta in a pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, warm olive oil and sauté minced garlic for about two minutes until fragrant.
- Cut roasted beetroots into chunks, then blend them with heavy cream, salt, and pepper until smooth.
- Pour the beetroot sauce into the skillet with sautéed garlic and stir over low heat until combined.
- Toss cooked pasta in the skillet with the sauce until well coated. Serve hot, topped with grated Parmesan cheese.
