Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream the softened butter and sugar until light and fluffy (about 3 minutes).
- In another bowl, whisk together flour, baking powder, cinnamon, and nuts. Set aside.
- Add eggs one at a time to the butter-sugar mix while blending on low speed. Gradually add dry ingredients until just combined.
- Gently fold in diced apples.
- Drop rounded tablespoons of dough onto prepared sheets, spacing them two inches apart. Bake for 12–15 minutes or until golden brown.
