  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly coat a baking dish with non-stick cooking spray.
  2. Slice zucchinis lengthwise into thin strips, about 1/8 inch thick. Lay on paper towels, sprinkle with salt, and let sit for 10 minutes to remove excess moisture.
  3. In a bowl, mix together the ricotta, half of the mozzarella, Parmesan, egg, and basil until well combined.
  4. Place one tablespoon of the cheese mixture at one end of each zucchini strip and roll tightly. Arrange seam-side down in the prepared baking dish.
  5. Pour marinara sauce over the rolls and sprinkle with remaining mozzarella cheese.
  6. Cover with foil and bake for 25 minutes. Uncover and bake for an additional 10-15 minutes until golden and bubbly.
