- 2 medium zucchinis
- 1 cup whole-milk ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 large egg
- ¼ cup fresh basil leaves, chopped
- 2 cups marinara sauce (store-bought or homemade)
- Salt to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly coat a baking dish with non-stick cooking spray.
- Slice zucchinis lengthwise into thin strips, about 1/8 inch thick. Lay on paper towels, sprinkle with salt, and let sit for 10 minutes to remove excess moisture.
- In a bowl, mix together the ricotta, half of the mozzarella, Parmesan, egg, and basil until well combined.
- Place one tablespoon of the cheese mixture at one end of each zucchini strip and roll tightly. Arrange seam-side down in the prepared baking dish.
- Pour marinara sauce over the rolls and sprinkle with remaining mozzarella cheese.
- Cover with foil and bake for 25 minutes. Uncover and bake for an additional 10-15 minutes until golden and bubbly.
