- 1.5 lbs boneless chicken thighs
- 1 cup pitted green olives
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp paprika
- 1 tsp ground cinnamon
- 2 cups low-sodium chicken broth
- Juice of 1 lemon
Instructions
- Prepare ingredients by chopping the onion and mincing the garlic.
- Heat olive oil in a large pot over medium heat. Sear the seasoned chicken thighs until golden brown on both sides (about 5 minutes each).
- Remove the chicken from the pot; sauté onions and garlic in the same pot until soft (about 5 minutes).
- Add spices to the onion mixture and toast for 2 minutes until fragrant.
- Return chicken to the pot, add olives, broth, and lemon juice; bring to a simmer and cover.
- Cook on low heat for 30 minutes until the chicken is tender and fully cooked.
