- 4 large flour tortillas
- 2 cups cooked shredded chicken (about 1 rotisserie chicken)
- 2 cups shredded Swiss cheese
- 1 can (4 oz) diced green chiles
- 1 can (10.5 oz) cream of mushroom soup
- 1/4 cup milk
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 350°F (175°C). Spray a large baking dish with nonstick cooking spray.
- In a bowl, combine shredded chicken, drained green chiles, and half of the Swiss cheese until well mixed.
- Lay each tortilla flat, fill with the mixture, and roll tightly. Place seam-side down in the prepared baking dish.
- In another bowl, mix cream of mushroom soup and milk; pour evenly over the enchiladas.
- Top with remaining Swiss cheese and cover with aluminum foil.
- Bake for 25 minutes covered, then remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
- Garnish with fresh cilantro before serving.
