  • 4 large flour tortillas
  • 2 cups cooked shredded chicken (about 1 rotisserie chicken)
  • 2 cups shredded Swiss cheese
  • 1 can (4 oz) diced green chiles
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/4 cup milk
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a large baking dish with nonstick cooking spray.
  2. In a bowl, combine shredded chicken, drained green chiles, and half of the Swiss cheese until well mixed.
  3. Lay each tortilla flat, fill with the mixture, and roll tightly. Place seam-side down in the prepared baking dish.
  4. In another bowl, mix cream of mushroom soup and milk; pour evenly over the enchiladas.
  5. Top with remaining Swiss cheese and cover with aluminum foil.
  6. Bake for 25 minutes covered, then remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
  7. Garnish with fresh cilantro before serving.
