- 4 large starchy potatoes (about 2 lbs), peeled and thinly sliced
- 6 large eggs
- 1 medium yellow onion (optional), thinly sliced
- 1/2 cup extra virgin olive oil
- 1 tsp salt
Instructions
- 1. Peel and thinly slice the potatoes. Rinse under cold water to remove excess starch.
- 2. Heat olive oil in a skillet over medium heat. Add potato slices and cook gently for 15-20 minutes until tender and slightly golden.
- 3. In a bowl, whisk eggs with salt until frothy. Mix in sautéed potatoes after they cool slightly.
- 4. Wipe the skillet clean, add more olive oil if needed, then pour in the potato-egg mixture. Cook on low heat for 5-7 minutes until set on the bottom.
- 5. Carefully flip the omelette onto a plate and slide it back into the pan to cook for another 5 minutes until both sides are golden brown.
- 6. Transfer to a serving platter, cut into wedges, and enjoy warm or at room temperature.
