Instructions
- Preheat your oven to 400°F (200°C) and place a cast-iron skillet inside to warm.
- In a large bowl, whisk together cornmeal, flour, baking powder, and salt until combined.
- In another bowl, mix melted butter (reserve some for brushing), honey, milk, and eggs until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; avoid over-mixing.
- Carefully remove the hot skillet from the oven and pour in the batter. Bake for 20-25 minutes or until golden brown.
- Brush the warm cornbread with melted butter mixed with honey before serving.
