Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter; press into muffin tins lined with cupcake wrappers.
- In a bowl, beat cream cheese until smooth. Add sour cream and sugar; mix until creamy.
- Gently fold in cranberries and chopped pistachios.
- Spoon the mixture into prepared crusts, filling generously.
- Bake for 20-25 minutes until edges are set but centers jiggle slightly.
- Cool at room temperature before chilling in the fridge for at least two hours.
