Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then slice them into even rounds (½ inch thick).
- Toss the sweet potato rounds in a large bowl with olive oil, salt, pepper, and thyme.
- Spread on a parchment-lined baking sheet in a single layer.
- Roast for 25-30 minutes, flipping halfway through until golden brown.
- Drizzle warm honey over the roasted rounds and sprinkle with feta before serving.
