- 1 cup all-purpose flour
- 1 large egg
- 1 cup roasted beets, finely chopped
- 4 oz goat cheese, softened
- 2 oz grated Parmesan cheese
- 2 tbsp unsalted butter
- 6 fresh sage leaves
- Salt to taste
Instructions
- Roast the beets by wrapping them in foil and baking at 400°F (200°C) for about an hour until tender. Once cooled, peel and finely chop.
- In a bowl, mix chopped beets with goat cheese, Parmesan, and one beaten egg until smooth.
- Roll out the fresh pasta dough thinly to about 1/8 inch.
- Use a heart-shaped cutter to cut the dough and place spoonfuls of filling on half of the shapes. Top with another piece of dough and seal tightly.
- Boil salted water in a pot and cook ravioli for 3-4 minutes or until they float.
- In a pan over medium heat, melt butter and add sage leaves until fragrant; toss cooked ravioli in the sage butter before serving.
