  • Total Time: 40 minutes
  • Yield: Serves 4

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 cup roasted beets, finely chopped
  • 4 oz goat cheese, softened
  • 2 oz grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 6 fresh sage leaves

  1. Roast the beets by wrapping them in foil and baking at 400°F (200°C) for about an hour until tender. Once cooled, peel and finely chop.
  2. In a bowl, mix chopped beets with goat cheese, Parmesan, and one beaten egg until smooth.
  3. Roll out the fresh pasta dough thinly to about 1/8 inch.
  4. Use a heart-shaped cutter to cut the dough and place spoonfuls of filling on half of the shapes. Top with another piece of dough and seal tightly.
  5. Boil salted water in a pot and cook ravioli for 3-4 minutes or until they float.
  6. In a pan over medium heat, melt butter and add sage leaves until fragrant; toss cooked ravioli in the sage butter before serving.
