- 1/2 cup dried cranberries
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, mix rolled oats, nuts, cranberries, cinnamon, and nutmeg.
- In another bowl, whisk together pumpkin puree and maple syrup until smooth.
- Combine wet and dry ingredients; mix well until coated.
- Press mixture into the prepared baking dish and bake for 25-30 minutes until golden brown.
- Cool in the pan for 10 minutes before transferring to a wire rack; cut into squares.
