- Juice of 1 lemon
Instructions
- Boil potatoes in salted water until fork-tender, about 15-20 minutes. Drain and cool slightly.
- In a large bowl, mix mayonnaise and Dijon mustard until smooth.
- Add cooled potatoes to the dressing and toss gently.
- Fold in red onion, dill, smoked salmon, and lemon juice carefully.
- Cover and chill in the refrigerator for at least one hour before serving.
