Instructions

  1. 1. Prepare the Dough: In a large bowl, mix flour and salt. Gradually add lukewarm water while stirring until a soft dough forms. Knead for about 5 minutes until smooth. Cover with plastic wrap and let rest.
  2. 2. Make the Filling: Boil potatoes in salted water until tender (15-20 minutes). Drain, mash, and mix with sautéed onions (sauté until golden), salt, and pepper.
  3. 3. Roll Out the Dough: Divide rested dough into golf-ball-sized pieces. Roll each into thin circles (6 inches in diameter).
  4. 4. Fill and Shape: Place 2 tbsp of filling in the center of each circle. Fold over and pinch edges tightly to seal.
  5. 5. Bake: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper, place knishes on it, brush with melted butter, and bake for 30-35 minutes until golden brown.
