- 1 cup unsalted pistachios (shelled)
- 1 cup all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter (softened)
- 3 large eggs
- 2 tbsp rosewater
- 1 tsp baking powder
Instructions
- Preheat oven to 350°F (175°C) and grease a round baking pan.
- Roughly chop the pistachios, reserving some whole for garnish.
- In a bowl, cream together softened butter and sugar until light and fluffy (about 3 minutes).
- Beat in eggs one at a time, then add rosewater.
- In another bowl, whisk together flour and baking powder; gently fold into the wet mixture along with chopped pistachios.
- Pour the batter into the prepared pan and bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Allow to cool before serving, garnishing with reserved whole pistachios.
