Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a blender, combine soaked cashews, roasted red peppers, nutritional yeast, garlic powder, almond milk, lemon juice, salt, and pepper. Blend until smooth.
- Transfer the mixture to a saucepan over medium heat. Stir frequently until heated through (about 5 minutes).
- Add cooked pasta to the sauce in the saucepan and toss until evenly coated.
- Serve garnished with fresh herbs like basil or parsley.
