- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped (or cilantro)
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, combine sliced carrots and drained chickpeas. Drizzle with olive oil, then add cumin, salt, and pepper. Toss until evenly coated.
- Spread the mixture on the prepared baking sheet in a single layer, ensuring they are not overcrowded.
- Roast in the preheated oven for 25-30 minutes until the carrots are tender and slightly caramelized.
- Remove from oven and garnish with fresh parsley before serving.
