  • 1 cup mochiko (sweet rice flour)
  • 3/4 cup water

Instructions

  1. In a large mixing bowl, combine flour, sugar, yeast, matcha powder, and salt. Mix well.
  2. Melt the butter and mix it into warm milk before adding to dry ingredients. Knead until smooth (about 5 minutes).
  3. Cover the dough and let it rise in a warm place until doubled in size (about 1 hour).
  4. For the filling, mix mochiko and water in a separate bowl to form a thick paste; microwave until gooey (about 2 minutes total).
  5. Roll out the risen dough into a rectangle about half an inch thick and cut into triangles.
  6. Place a spoonful of mochi filling at the wide end of each triangle and roll towards the pointy tip.
  7. Preheat your oven to 375°F (190°C). Let croissants rest for another half hour before baking for 20-25 minutes or until golden brown.
