Instructions
- Preheat your oven to 350°F (175°C) and prepare muffin tins with liners.
- In a large bowl, whisk together the eggs, coconut milk, and melted butter until smooth.
- In another bowl, mix the flour, sugar, baking powder, and shredded coconut.
- Gradually combine the dry ingredients into the wet mixture until just blended; gently fold in mango pieces.
- Fill muffin tins three-quarters full and bake for 20-25 minutes or until golden brown.
- Cool slightly before serving.
