- 1 cup whole milk
- 1/2 cup granulated sugar
- 1 packet (2 1/4 tsp) gelatin powder
- 1/4 cup fresh herbs (basil or mint)
- 3 medium plums, halved and pitted
- 1 tbsp lemon juice
- 1/2 tsp cinnamon
Instructions
- 1. Bloom gelatin: Sprinkle gelatin over 1/4 cup cold milk in a small bowl and let sit for five minutes.
- 2. Infuse cream: In a saucepan, heat heavy cream, sugar, and herbs over medium heat until sugar dissolves (about five minutes). Remove from heat and stir in bloomed gelatin until dissolved.
- 3. Strain mixture: Pour the cream mixture through a fine mesh sieve into serving cups to remove herbs. Refrigerate for at least four hours until set.
- 4. Roast plums: Preheat oven to 400°F (200°C). Arrange plum halves on a baking sheet, drizzle with lemon juice, sprinkle with cinnamon, and roast for 15 minutes until tender.
- 5. Serve: Once panna cotta has set, top with roasted plums and any syrup from roasting. Enjoy!
