Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Grate zucchinis and squeeze out excess moisture using a clean towel.
- In a bowl, whisk together flour, sugars, cinnamon, nutmeg, baking powder, baking soda, and salt.
- In another bowl, mix eggs and vegetable oil until smooth; stir in grated zucchini.
- Combine wet and dry ingredients until just mixed—avoid overmixing.
- Spread batter in the prepared dish and bake for 25-30 minutes or until a toothpick comes out clean. Cool completely before frosting.
- For the frosting, beat softened butter until creamy; gradually add powdered sugar and vanilla. Stir in milk until desired consistency is reached.
