- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cups fresh romaine lettuce, chopped
- 1 cup Caesar dressing
- 1/2 cup freshly grated Parmesan cheese
- 4 ciabatta rolls or baguette slices
- 1 cup panko breadcrumbs
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper, coat with olive oil, and roll in panko breadcrumbs.
- Place coated chicken on a parchment-lined baking sheet and bake for 20-25 minutes until internal temperature reaches 165°F (75°C).
- While chicken bakes, wash and dry romaine lettuce and slice bread open lengthwise.
- Once chicken is cooked, slice it into strips and toss with Caesar dressing.
- Layer romaine lettuce on one side of the bread, followed by dressed chicken strips and sprinkle with Parmesan cheese.
- Close the sandwich gently; optionally bake for an additional 5 minutes to warm through.
- Serve with extra Caesar dressing drizzled on top.
