- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cups fresh spinach
- 1 can (10.5 oz) cream of chicken soup
- 1 cup whole milk
- 2 cups shredded cheddar cheese
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with nonstick spray.
- Season chicken breasts with salt and pepper. In a skillet over medium heat, sear chicken for 5-6 minutes per side until golden brown but not fully cooked.
- In a large bowl, mix cream of chicken soup and milk until smooth. Stir in garlic powder.
- Fold in fresh spinach and half of the shredded cheddar cheese until well combined.
- Arrange seared chicken in the prepared baking dish and pour the creamy mixture over it evenly. Top with remaining cheese.
- Cover with aluminum foil and bake for 30 minutes, removing the foil during the last 10 minutes for a golden crust.
