- 1 lb boneless, skinless chicken breasts
- 8 oz medium shrimp (peeled and deveined)
- 8 oz fettuccine or penne pasta
- 2 tbsp Cajun seasoning
- 1 cup heavy cream
- 3 cloves garlic (minced)
- ½ cup grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
Instructions
- Prepare the pasta: Boil salted water and cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
- Sauté the chicken: In a large skillet over medium heat, add olive oil and cook seasoned chicken breasts for about 5 minutes on each side until golden brown. Remove from skillet and let rest.
- Cook the shrimp: In the same skillet, add more oil if needed and sauté shrimp for about 3 minutes until pink, seasoning with Cajun spice.
- Make the sauce: Add minced garlic to the skillet with shrimp and sauté for one minute. Stir in heavy cream and chicken broth, scraping up any bits from the pan.
- Combine: Slice rested chicken into strips and return it to the skillet along with cooked pasta. If necessary, add reserved pasta water to achieve desired creaminess.
- Serve: Garnish with grated Parmesan cheese before serving.
