Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
- Add eggs one at a time, mixing well after each addition; stir in vanilla extract.
- In another bowl, whisk together flour, baking soda, and instant coffee granules; gradually add to wet ingredients until just combined.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them two inches apart.
- Bake for 10–12 minutes or until edges are golden but centers remain soft; cool on the baking sheet for five minutes before transferring to wire racks.
