- 6 large eggs
- 1 lb ground sausage meat (pork or chicken)
- 1 cup panko breadcrumbs
- ½ cup all-purpose flour
- 2 tsp salt
- 1 tsp black pepper
- – Optional: herbs (thyme or sage) to taste
- Vegetable oil for frying
Instructions
- Boil the eggs for 6 minutes for soft-boiled perfection, then transfer them to an ice bath to cool.
- In a bowl, combine the ground sausage with salt, pepper, and optional herbs until mixed but not overworked.
- Peel the cooled eggs gently under running water.
- Flatten sausage mixture in your hand, wrap it around each egg thoroughly.
- Set up bowls with flour, beaten egg wash (whisked), and breadcrumbs. Coat each wrapped egg first in flour, then dip in egg wash, and finally coat with breadcrumbs.
- Heat vegetable oil in a pan to 350°F (175°C). Fry each egg until golden brown (about 4 minutes per side). Drain on paper towels before serving with mustard or relish.
