  • Total Time: 35 minutes
  • Yield: Serves 6

Ingredients

Scale
  • 6 large eggs
  • 1 lb ground sausage meat (pork or chicken)
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 2 tsp salt
  • 1 tsp black pepper
  • – Optional: herbs (thyme or sage) to taste
  • Vegetable oil for frying

Instructions

  1. Boil the eggs for 6 minutes for soft-boiled perfection, then transfer them to an ice bath to cool.
  2. In a bowl, combine the ground sausage with salt, pepper, and optional herbs until mixed but not overworked.
  3. Peel the cooled eggs gently under running water.
  4. Flatten sausage mixture in your hand, wrap it around each egg thoroughly.
  5. Set up bowls with flour, beaten egg wash (whisked), and breadcrumbs. Coat each wrapped egg first in flour, then dip in egg wash, and finally coat with breadcrumbs.
  6. Heat vegetable oil in a pan to 350°F (175°C). Fry each egg until golden brown (about 4 minutes per side). Drain on paper towels before serving with mustard or relish.
