- Salt and pepper to taste
Instructions
- 1. Preheat your oven to 400°F (200°C).
- 2. Wash and halve the baby potatoes.
- 3. In a large bowl, combine the potatoes with olive oil, minced garlic, salt, pepper, and herbs. Toss until well-coated.
- 4. Spread the potatoes on a baking sheet lined with parchment paper in a single layer.
- 5. Bake for 25-30 minutes until golden brown and tender.
- 6. Remove from oven; sprinkle cheese evenly over hot potatoes and return to the oven for an additional 5-7 minutes until melted.
