- 3 lbs chuck roast

- 4 garlic cloves, crushed

- 2 lbs Yukon Gold potatoes, peeled and chopped
- 4 tbsp unsalted butter
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 325°F (160°C).
- Pat the beef roast dry, rub with olive oil, and season generously with salt and pepper.
- Sear the roast in a hot skillet on all sides until browned (about 3-4 minutes per side).
- Place the roast in a roasting pan with garlic and rosemary. Add broth or water to cover the bottom slightly.
- Cover tightly with foil and roast for about two hours or until fork-tender.
- Boil chopped potatoes until fork-tender (15-20 minutes), then drain.
- In a bowl, mash potatoes with butter and heavy cream until smooth; season with salt to taste.
- Serve sliced beef alongside creamy mashed potatoes.
