- 1/2 cup unsweetened shredded coconut
- 1/3 cup semi-sweet chocolate chips
- 12 whole almonds
- 2 tablespoons almond butter (or nut butter of choice)
Instructions
- Slice each Medjool date lengthwise to create a pocket.
- In a bowl, mix shredded coconut, chocolate chips, and almond butter until well combined.
- Stuff each date with about 1 tablespoon of the mixture and place an almond on top.
- Chill stuffed dates in the fridge for at least 30 minutes.
- (Optional) Melt additional chocolate chips and drizzle over chilled dates before serving.
