Instructions
- Preheat the oven and cook fries according to package instructions until golden and crispy.
- In a skillet, cook bacon over medium heat until crispy. Drain on paper towels.
- Poach eggs in simmering water for about 3 minutes until whites are set but yolks remain runny.
- For hollandaise, whisk egg yolks and lemon juice in a bowl. Melt butter, then gradually whisk into the yolk mixture until creamy. Stir in cayenne pepper and season with salt.
- Assemble by layering fries on plates, topping them with crumbled bacon, poached eggs, and drizzling hollandaise sauce generously before serving.
