- 1 cup blanched almonds
- 2 cups whole milk (or almond milk for a dairy-free option)
- ½ cup granulated sugar
- 3 tbsp cornstarch
- 1 tsp vanilla extract
Instructions
- Soak the blanched almonds in hot water for 30 minutes, then drain.
- Blend soaked almonds with 1 cup of milk until smooth.
- In a saucepan, combine the almond mixture, remaining milk, and sugar over medium heat, stirring constantly until thickened (about 10 minutes).
- Mix cornstarch with 1 tbsp cold water until smooth; gradually add to the saucepan while stirring until desired thickness is reached.
- Remove from heat and stir in vanilla extract. Let cool slightly before transferring to serving dishes.
- Refrigerate for at least two hours before serving; top with slivered almonds or fresh fruit if desired.
