- 4 salmon fillets (6 oz each)
- 8 oz fresh cremini or button mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup low-sodium chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- 2 tbsp lemon juice
- Salt and pepper to taste
- 2 tbsp butter or olive oil
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season salmon fillets with salt and pepper; place skin-side down in the baking dish.
- In a skillet over medium heat, melt butter or olive oil. Sauté mushrooms for about 5 minutes until golden brown, then add minced garlic.
- Pour in heavy cream and chicken broth; simmer for 5 minutes until slightly thickened. Stir in Parmesan cheese until melted.
- Pour the creamy mushroom sauce over the salmon and drizzle with lemon juice.
- Bake for 15-20 minutes or until salmon flakes easily with a fork. Serve with additional sauce drizzled on top.
