  • 2 tbsp matcha powder (for dough)
  • ¼ cup granulated sugar
  • ½ cup cold butter or coconut oil
  • 4 tbsp milk (dairy or non-dairy)
  • 1 tsp vanilla extract
  • ¾ cup powdered sugar (for filling)
  • 1 tbsp matcha powder (for filling)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, whisk together gluten-free flour, sugar, matcha powder, and salt.
  2. Cut in the butter or coconut oil until crumbly. Stir in milk and vanilla until a soft dough forms.
  3. Roll out half the dough on a floured surface to about 1/8 inch thick and cut into rectangles.
  4. In another bowl, mix powdered sugar and matcha for the filling.
  5. Spoon filling onto half of the rectangles; top with remaining rectangles and crimp edges with a fork.
  6. Bake for 20-25 minutes until golden brown. Let cool before icing with powdered sugar mixed with milk.
