- 1 ½ cups gluten-free all-purpose flour (with xanthan gum)
- 2 tbsp matcha powder (for dough)
- ¼ cup granulated sugar
- ½ cup cold butter or coconut oil
- 4 tbsp milk (dairy or non-dairy)
- 1 tsp vanilla extract
- ¾ cup powdered sugar (for filling)
- 1 tbsp matcha powder (for filling)
Instructions
- Preheat oven to 350°F (175°C). In a large bowl, whisk together gluten-free flour, sugar, matcha powder, and salt.
- Cut in the butter or coconut oil until crumbly. Stir in milk and vanilla until a soft dough forms.
- Roll out half the dough on a floured surface to about 1/8 inch thick and cut into rectangles.
- In another bowl, mix powdered sugar and matcha for the filling.
- Spoon filling onto half of the rectangles; top with remaining rectangles and crimp edges with a fork.
- Bake for 20-25 minutes until golden brown. Let cool before icing with powdered sugar mixed with milk.
