Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Beat egg yolks with half of the sugar until thick and pale.
- In another bowl, whip egg whites until soft peaks form; gradually add remaining sugar until glossy stiff peaks form.
- Gently fold one-third of the egg whites into the yolk mixture, then incorporate flour. Fold in remaining egg whites carefully.
- Transfer batter to a piping bag and pipe strips onto prepared sheets; dust lightly with cocoa powder.
- Bake for 10-12 minutes until golden; let cool completely before serving.
