Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy (about 3-5 minutes).
- Gradually mix in the sifted flour and salt until just combined.
- Divide dough into two portions, wrap in plastic wrap, and refrigerate for 1 hour.
- Roll out chilled dough on a floured surface to 1/8-inch thickness. Cut shapes using cookie cutters; cut centers from half of the cookies.
- Place cookies on prepared sheets and bake for 10-12 minutes until golden around edges.
- Cool completely before spreading strawberry jam on solid cookies and topping with cut-out ones. Dust with powdered sugar before serving.
