Turkish Asure, also known as Noah’s Pudding, is a delightful dessert that offers a harmonious blend of grains, fruits, nuts, and spices. Ingredients

  • 1 cup whole wheat berries
  • 1/4 cup rice
  • 1/2 cup dried apricots, chopped
  • 1/4 cup raisins
  • 1/2 cup walnuts or almonds, chopped
  • 1/2 cup granulated sugar (or honey)
  • 1 tsp ground cinnamon
  • 8 cups water

Instructions

  1. Soak the wheat berries in water overnight for even cooking.
  2. Drain and place the soaked wheat berries in a large pot with fresh water. Boil over medium heat, then reduce to low and simmer until tender (about 1 hour).
  3. Add rice to the pot and continue cooking until both grains are soft and most of the liquid is absorbed (about 30 minutes).
  4. Stir in dried fruits and sweeten with sugar or honey. Simmer for an additional 5 minutes.
  5. Serve warm, garnished with chopped nuts and a sprinkle of cinnamon.
