- 4 medium sweet potatoes (about 1.5 lbs)
- 1 lb lean ground turkey
- 1 cup fresh or dried cranberries
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tsp olive oil
- Salt and pepper to taste
- 1 tsp dried thyme
Instructions
- 1. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
- 2. Wash the sweet potatoes and poke holes in them with a fork. Bake for about 45 minutes or until tender.
- 3. In a skillet over medium heat, add olive oil. Sauté onion and garlic until fragrant, about 2 minutes. Add ground turkey and cook until browned.
- 4. Stir in cranberries, salt, pepper, and thyme; simmer for an additional 5 minutes.
- 5. Slice baked sweet potatoes down the middle without cutting all the way through. Fluff the insides with a fork and fill generously with the turkey-cranberry mixture.
- 6. Serve warm, optionally drizzling with cranberry sauce.
