Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add olive oil and sauté the diced onion until translucent. Add the diced bell peppers and zucchini; cook until softened. Stir in the spinach until just wilted.
- In a separate bowl, whisk together the eggs with salt and pepper until fully blended.
- Pour the egg mixture over the sautéed vegetables in the skillet; gently stir to combine without losing layers.
- Sprinkle shredded cheese on top and transfer to the oven (or pour into a greased baking dish).
- Bake for about 20-25 minutes or until set and slightly golden on top. Allow to cool slightly before slicing.
