Instructions
- Slice the papaya in half, scoop out the seeds, and blend the flesh until smooth.
- In a blender, combine blended papaya, coconut milk, honey or maple syrup, and vanilla extract until creamy.
- Transfer the mixture to a bowl and stir in chia seeds until well combined.
- Cover and refrigerate for at least 2 hours or overnight.
- Stir again before serving and top with sliced fruit, nuts, or coconut flakes as desired.
