- 1 cup diced ripe pears (about 2 medium pears)
- ½ cup quick oats (for streusel)
- ¼ cup melted butter
- 2 large eggs
- ½ cup milk
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, chai spice blend, and salt.
- In another bowl, mix melted butter, eggs, and milk. Gently fold in diced pears.
- Combine wet and dry ingredients until just mixed; do not overmix.
- For the streusel, mix oats with brown sugar and melted butter until crumbly.
- Fill muffin cups three-quarters full with batter and top with streusel.
- Bake for 20-25 minutes until golden brown. Allow cooling slightly before serving.
